Yay for Valentine’s Day treats!! My social media feeds are full of chocolate-y, pink, sweet, indulgent treats that are making me drool. So I just know that these dark chocolate coated champagne cake bites are going to fit right in! These are seriously difficult to resist – I ate far too many of these and ended up in a chocolate-induced food coma before taking these photos. Lesson learned! They’re super pretty to look at, soft and sugary and the ultimate Valentine’s Day dessert.
What are you guys doing for Valentine’s Day? I know it’s a Tuesday and all, but I hope you guys have some exciting plans happening! I will, most likely, curl up at home, hide away from the people outside and spend the night with a husband and a bottomless glass of wine (not necessarily in that order). I won’t dare to venture out on Valentine’s Day. It’s too hectic everywhere, couples making gooey eyes at each other and servers rushing people through dinner in order to get to the next sitting. I’m sure they’ll judge me if I wear my sweatpants out to dinner and I’d prefer to not have them do that, so home it is!
These dark chocolate wrapped cake bites will definitely make an appearance on Tuesday. I may have made some extra and hid them in our freezer so my husband won’t eat them all. Unless he reads this, in which case I’m taking a pause from writing this and hiding them somewhere new.
This treat is perfect to share (or NOT share) on Valentine’s Day. Possibly with a glass of champagne on the side…or two, I mean you don’t want that bottle to fizz out right!!? I love the feeling of cracking into the chocolate shell and into the soft, sugary centre. And I just LOVE that there’s champagne in these treats – it feels totally luxurious and indulgent! The taste of champagne is subtle but can’t be missed and the sweet vanilla taste is perfectly contrasted with the dark chocolate coating. These cake bites are so pretty to look at, the rose petals make it feel that much more romantic!
I just can’t get over these treats. Who doesn’t want little bites of cake mixed with vanilla icing and champagne?? AND you’ll have champagne left over to drink, I’m totally looking out for you here.
I found the cake mixture to be a little wetter than usual because of the champagne mixed into the icing. So chill the mixture for an hour before rolling them into balls and then again after dipping them in chocolate to firm them up. I topped them with dried rose petals because they make them look extra pretty and the others with cocoa nibs for a little extra crunch!
