Honey & Soy Baked Chicken Recipe

Around here chicken makes a regular appearance on the dinner table. To tell you the truth, it gets a little boring after awhile – grilled chicken, baked chicken, sautéed chicken, chicken soup, chicken n’ pasta… But with all that chicken, my family never tires of chicken thighs. We like the dark meat around here y’all. It’s good stuff and pretty inexpensive, too, but use whatever kinda chicken you like.

This recipe is simple to whip up right before cooking or to use ahead of time as a marinade. Although a marinade typically includes an acid, such as a vinegar or citrus juice, you could certainly add either to this recipe. For this recipe you’ll need olive oil, soy sauce, garlic cloves (or garlic powder), ground ginger, honey, salt and pepper. You can easily switch up the ingredients to your liking and taste. A splash of sesame oil would be a nice addition.Basically, mix all ingredients together in a large plastic zip-top storage bag, add the chicken making sure to coat each piece. Place chicken and sauce/marinade in baking dish or leave in large plastic bag to marinate in the refrigerator until ready to cook.

When ready to cook, bake in a 425° oven for 25 minutes with the skin side up. Turn the chicken and cook another 15 minutes. Then turn the chicken again to skin side up and finish cooking for another 10 minutes to crisp up the skin. Cook until internal temperature of chicken reads 165°F.You can skip all the turning and flipping of the chicken if you’d like, but I think it cooks more evenly helping to avoid one side being too dry. These would be mighty tasty grilled as well.


Honey Soy Baked Chicken

Ingredients:
  •     3 tablespoons olive oil
  •     3 tablespoons soy sauce
  •     5 tablespoons honey
  •     4 cloves of garlic; minced (or substitute 1/2 teaspoon garlic powder)
  •     1/2 teaspoon ground ginger
  •     1/2 teaspoon fresh ground pepper
  •     3 pounds (approximately) chicken thighs (or preferred chicken meat)
  •     salt and pepper to taste

So it seems like stir fries have kind of become my thing. It wasn’t something I set out to do, but my stir fry recipes tend to be some of the most popular recipes on my site! Today I’ve got a honey garlic chicken version that’s quick, healthy and incredibly easy to make! I love that you can customize the meat and veggies exactly to your liking, and the honey garlic chicken sauce only has 4 ingredients, how can you go wrong with that?

Let’s first talk about how to make honey garlic chicken. Cook the vegetables in a hot pan, then remove the vegetables and add diced chicken breast and minced garlic. When the chicken is cooked through, add the vegetables back into the pan. Whisk together chicken broth, soy sauce, honey and corn starch, then pour over the chicken and vegetables. Simmer for a few minutes then enjoy!

You can use whatever vegetables you like here, I typically go with carrots and broccoli because that’s what my family prefers. Other great options are mushrooms, bell peppers, onions, snow peas, green beans or even asparagus. This recipe is written for garlic lovers with 4 cloves of garlic in the dish. If you prefer you can cut that amount down to 2-3 cloves and it’ll still be delicious. Serve your honey garlic chicken over rice for a quick meal that’s sure to please the whole family.

Quick Chicken Pho

This recipe is a great introduction to pho if you’ve never had it before. And for pho addicts like myself, it’s a good one to have around when a pho-craving strikes.

There are so many things to love about Andrea’s new cookbook, and not just the recipes! In Andrea’s own words when I spoke with her about it, “This cookbook contains 99% of what I know about pho. And the other 1% isn’t all that interesting.”

Again and again, Andrea underscores the idea that pho is not a fussy or difficult dish to make at home. There are no laborious prep requirements or unfamiliar techniques to master. Really, if you can boil water, you can make pho.

This is because, with pho, it’s really all about the broth. The noodles and bits of tender meat definitely have curb appeal and make the soup into a substantive meal, but all the real flavor and allure of pho comes from a slow-simmered broth.

Making a good pho broth will feel familiar to anyone who has ever made their own chicken stock or beef stock. The process is almost exactly the same, except for the addition of a few uniquely Vietnamese ingredients like star anise, cinnamon, ginger, soy sauce, and fish sauce. These extra ingredients give pho its seductive personality and trademark balance of sweet, salty, and savory flavors.

Of all these ingredients, fish sauce is likely to be the least familiar to most of us. It’s exactly what it sounds like: a sauce made from fermented fish. It has an intense flavor and super-pungent aroma, like concentrated anchovies.

You might be dubious about adding this to your food, but give it a chance! Fish sauce adds a deep (and surprisingly non-fishy) flavor to foods. Once added, it melts into the background. You won’t necessarily be able to pick it out of the crowd, but you’d miss it if it weren’t there.

Quick Chicken Pho Recipe

Ingredients:

  • 3/4-inch (2 cm) section ginger
  • 2 medium-large green onions
  • 1 very small (.5 oz | 15 g) bunch cilantro sprigs
  • 1 1/2 teaspoons coriander seeds
  • 1 whole clove
  • 3 1/2 to 4 cups (840 ml to 1 l) low-sodium chicken broth
  • 2 cups (480 ml) water
  • 6 to 8 ounces (180 to 225 g) boneless, skinless chicken breast or thighs
  • About 1/2 teaspoon fine sea salt
  • 5 ounces (150 g) dried narrow flat rice noodles
  • 2 to 3 teaspoons fish sauce
  • About 1/2 teaspoon organic sugar, or 1 teaspoon maple syrup (optional)
  • Pepper (optional)
  • Optional extras: Bean sprouts, mint sprigs, Thai basil, cilantro leaves, lime wedges, thinly-sliced chili peppers
