5minutes recipe | Chicken Pepper Bacon Melts

Chicken Pepper Bacon Melts Recipe



Prep Time: 30 mins
Cook Time: 30 mins
Yield: 4-6 servings


Ingredients:

  •     ½ pound bacon slices (8 strips)
  •     1 large red bell pepper, about 8 ounces cut into thick strips
  •     8 ounces (in weight) sweet onion such as Vidalia, cut into thick strips (one medium to large onion)
  •     1 cup all-purpose flour
  •     1 teaspoon kosher salt
  •     ¼ teaspoon freshly ground black pepper
  •     2 whole eggs
  •     2 tablespoons whole milk
  •     1 ½ cups bread crumbs
  •     1 pound boneless skinless chicken breast cut into four portions and pounded to ¼ inch thick
  •     Oil for frying
  •     ¾ cup condensed cream of chicken soup, see our homemade recipe here
  •     ¼ cup whole milk or light cream
  •     4 thick slices Fontina cheese, total 8 ounces

Instructions:

  1.     In a large sauté pan, cook bacon to just under crisp (still slightly chewy). Drain on paper towels and reserve bacon fat.
  2.     Leave two tablespoons of bacon fat in the pan and reserve the remaining fat for later in this recipe.
  3.     Heat the pan to medium heat and add peppers and onions and cook over medium for ten minutes. Pour into a bowl and set aside.
  4.     Preheat oven to 350 degrees F.
  5.     Add salt and pepper to flour and place in a pie plate.
  6.     Place the two eggs and two tablespoons of milk in a large bowl and whip.
  7.     Place bread crumbs in a second pie plate.
  8.     After chicken has been pounded, dip in flour, shake off excess, dip in egg then in bread crumbs and hold on a plate or platter.
  9.     In the same pan you used to cook the peppers and onions, add remaining bacon fat and top it off with vegetable oil to about one half inch deep. Heat to 350 degrees using a candy thermometer to test.
  10.     Line a sheet pan with foil.
  11.     Fry two pieces of chicken at a time browning on each side and removing to waiting sheet tray. It is not necessary to cook completely through as it will finish in the oven so cook just to a nice golden brown on both sides.
  12.     Mix the condensed cream of chicken soup with the quarter cup of milk or cream and microwave until hot. Divide this over the tops of each fried chicken portion.
  13.     Next, divide the cooked onion and peppers evenly over the tops of the portions.
  14.     Top each with two slices of bacon and then divide the cheese between each portion.
  15.     Bake uncovered for 10-15 minutes or until the cheese has fully melted and starting to brown.
  16.     Remove from oven and serve with your favorite side.

Italian Stuffed Shells

These Italian Stuffed Shells are the best! My all time favorite stuffed shells Creamy, cheesy, delicious!

Any pasta dish is so simple to put together and cheap to make. I stuffed these Italian Stuffed Shells with seasoned meat, cream cheese, and marinara sauce. I topped it with more marinara and shredded cheese and baked! It so simple to make and my entire family loved it!

I cooked 1/2 a pound of ground sausage with a 1/2 of pound of ground beef. Season it with Italian seasoning then add in cream cheese! Melt it in then mix in your marinara sauce. Stuff your shells and place them in a casserole dish. Top with more marinara sauce and shredded cheese. Bake and then dinner is ready! Simple and easy!

Ingredients:
  •     Jumbo shells, 1/2 box (This will depend on how full you stuff them)
  •     Ground sausage, 1/2 lb
  •     Ground beef, 1/2 lb
  •     Cream cheese, 4 oz
  •     Italian seasoning, 1 tsp
  •     Garlic powder, 1 tsp
  •     Marinara sauce, 1 1/2 cup (divided)
  •     Mozzarella cheese, shredded, 1/2 cup

So it seems like stir fries have kind of become my thing. It wasn’t something I set out to do, but my stir fry recipes tend to be some of the most popular recipes on my site! Today I’ve got a honey garlic chicken version that’s quick, healthy and incredibly easy to make! I love that you can customize the meat and veggies exactly to your liking, and the honey garlic chicken sauce only has 4 ingredients, how can you go wrong with that?

Let’s first talk about how to make honey garlic chicken. Cook the vegetables in a hot pan, then remove the vegetables and add diced chicken breast and minced garlic. When the chicken is cooked through, add the vegetables back into the pan. Whisk together chicken broth, soy sauce, honey and corn starch, then pour over the chicken and vegetables. Simmer for a few minutes then enjoy!

You can use whatever vegetables you like here, I typically go with carrots and broccoli because that’s what my family prefers. Other great options are mushrooms, bell peppers, onions, snow peas, green beans or even asparagus. This recipe is written for garlic lovers with 4 cloves of garlic in the dish. If you prefer you can cut that amount down to 2-3 cloves and it’ll still be delicious. Serve your honey garlic chicken over rice for a quick meal that’s sure to please the whole family.

Pressure Cooker Porcupine Meatballs

With rice and meat all in one dish, you just need a vegetable side to complete the meal.

This recipe is an update on a classic 1970s Betty Crocker dish, Oven Porcupines. The original version is baked in the oven for an hour, but my recipe is made in an electric pressure cooker (I’ve included stovetop instructions, too).

These pressure cooker meatballs are done in about half the time of the original, making it perfect for a midweek meal.

If you’re new to pressure cooking, an electric, programmable model is a great place to start. There are a few well-rated brands on the market. I use the 6-quart Instant Pot IP-DUO60 most of the time, which is a good size if you’re serving 4 to 6 people. We’re a household of two and we like having leftovers, so this size works out well for us.

My favorite way to serve these porcupine meatballs is with mixed steamed vegetables on the side. You know that classic frozen mix of carrots, corn, peas, green beans and lima beans? I microwave a big bowl of them while the meatballs are cooking, so everything is done at the same time.
I also like to serve these meatballs on top of spiralized zucchini noodles, or with riced cauliflower. For a retro dinner a la Betty Crocker, serve them with iceberg wedge salads and steamed, buttered green beans.

Pressure Cooker Porcupine Meatballs Recipe

 
Prep time: 10 minutes

Ingredients:

  • 2 tablespoons olive or vegetable oil
  • 1 medium yellow onion, chopped (reserve half)
  • 2 cloves garlic, minced (reserve half)
  • 1 can (15 ounces) tomato sauce
  • 1/2 cup water
  • 1 tablespoon Worcestershire sauce
  • 1 pound ground beef (85% lean)
  • 1/2 cup long grain rice
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
Special Equipment:
  • 6-quart Instant Pot, or other pressure cooker

Skin cancer, which is an increasingly common form, is often associated with over exposure to sun or other ultraviolet radiation, including tanning beds. Because individuals with fair skin are more susceptible to a sunburn, they are also more susceptible to skin cancer. In order to protect themselves from the sun’s strength, individuals should wear sunscreen with a high SPF, hats and long sleeve shirts. In addition, taking special care to not fall asleep in the sun or spend hours every day in it’s presence may help to lessen it’s harmful effects and possibly may even prevent skin cancer.
Symptoms of skin cancer are various, but the most common is a lesion that will not heal. This may also include discoloration and overall changes in the appearance of moles. The majority of skin cancer patients can be treated with a surgical procedure that involves removing the affected layers of the skin. If skin cancer is left untreated, however, it may begin to involve the deeper layers of the skin and possibly even the lymphatic system. In addition, it may spread to other parts of the body and become resistant to treatment if not detected early.

Of all the various forms of cancer, Skin cancer has one of the highest survival rates because, unlike the others, skin cancer is usually visible and leads to earlier detection. If a skin lesion does not heal within 7 to 10 days, or if a mole begins to change in shape, color or otherwise vary in appearance, a physician should be consulted in order to determine whether or not the lesion is cancerous. During testing, a piece of the skin will be removed by the physician and sent to a medical laboratory for further testing. If the test results are positive for the presence of cancer, the physician will invite the patient to return to his/her office for a conversation regarding possible treatment options.

Charcuterie Pizza with Prosciutto and Artichokes

It’s almost the weekend (woo hoo!) and I’m craving pizza! I’m so addicted to the crispy prosciutto and the tangy artichokes in this recipe.  The pizza is super cheesy and then topped with MORE cheese, because ummm…well why wouldn’t you!?

It’s so easy to make and you really just need to raid your fridge and pantry for the pizza toppings. You practically have all the ingredients in your kitchen.  YES!!!!

It’s been a busy week (what’s new?!) so I’m totally ready to sit back with this pizza on Friday night with a big glass of wine.  And this weekend is going to be quite busy too, but I’m excited for it!  I’m ready to get my mind off of work and start cooking, photographing and eating all the delicious things.  So, here’s our plan for the weekend,

Hmmm, maybe there’s a pattern there! But I’m OK with that.  Food always seems to be a good motivator for me, I tend to get more things done when I know there’ll be delicious food at the end of it!

This pizza will be my motivation this weekend.  It’s so easy to make and you can have this on the table in quick time.   No joke, from start to finish it was on the table within 30 minutes, so how can you NOT make this pizza!?

The artichokes are tangy and flavourful and the prosciutto is crispy, salty and tastes like bacon.  SOOOOO GOOD!! It’s cheesy and gooey and the crust is crunchy but soft on the inside.

This pizza is my new favourite meal.  I’m obsessed with homemade pizza lately and this charcuterie pizza has been my go to recipe.  It’s so easy because you really get to throw whatever is in your fridge onto this pizza! Grab any cheese, olives, meats from your fridge and raid your pantry for the unused bottle of marinated artichokes that I KNOW you have in there.  Or hey, mix it up and add sundried tomatoes, roasted red peppers, salami and/or ham (because I would never make you choose between them), mushrooms or olives.  There are so many ways to make this charcuterie pizza, I’m so excited to see what you all come up with!!


Charcuterie Pizza with Prosciutto and Artichokes Recipe

Ingredients:
  • ½ pound pizza dough
  • 1 tbsp olive oil
  • 1 cup mozzarella cheese
  • 6-8 slices prosciutto
  • 1 jar of marinated artichokes, chopped roughly
  • ¼ cup olives, chopped roughly
  • ¼ cup parmesan cheese
  • arugula or other lettuce green, chili flakes, salt and pepper

How to Make Quick and Easy Poached Chicken

I have a lot of recipes in my regular rotation that use just a small amount of shredded or sliced cooked chicken, like my go-to lunch salad, these BBQ burrito bowls, and any number of quick weeknight soups.

If I have some leftover chicken in the fridge, I use that for these easy meals. Otherwise, I use this poaching method to quickly cook a few chicken breasts when I need them!

When you want silky, tender chicken without a lot of fuss or fanfare, poaching is the way to go. The chicken cooks gently, retaining much more moisture than with other cooking methods. Adding herbs and other seasonings to the poaching liquid also helps season the chicken as it cooks — and you’re left with a tasty broth at the end!

My method is very simple and straightforward: Just cover the chicken with about an inch of water and bring it to a boil. Lower the heat until the water is simmering, cover the pot, and let the chicken cook. That’s it!

Thinner chicken breast cutlets are ready in about eight minutes, while larger, whole chicken breasts can take up to fifteen minutes. Just check frequently toward the end of cooking either by checking the internal temperature with a thermometer or slicing into the chicken to make sure it’s cooked through, and continue to cook until its done.

I use this method most frequently for cooking chicken breasts, but you can also use it for cooking chicken thighs if you prefer. Cook as many breasts (or thighs) at once as you like. They cook best when in a single layer, so use a pan big enough to hold everything.

For seasoning the poaching liquid during cooking, I most frequently use peppercorns, bay leaves, lemon slices, and garlic. You could also think about using sliced ginger, sliced scallions, fresh rosemary or thyme, or orange slices.

Use the chicken meat right away, or let it cool and refrigerate for up to five days. You can also freeze the cooked chicken for up to three months. I recommend shredding or slicing the chicken before to freezing.

And don’t throw away the cooking liquid! This method will make a lightly-flavored chicken broth, which you can use in place of chicken broth for other recipes or as the cooking liquid for rice and other grains. You can also sip it all on its own!

Recipe Conversion Hints!

One 12-ounce chicken breast will weigh about 8 ounces after poaching.
This amount of meat will give you about 2 cups of shredded chicken when lightly packed into the measuring cup. (Or about 2 1/3 cups if loosely packed.)
In other words: 1 average chicken breast = 8 ounces cooked = 2 cups shredded.

How to Make Quick and Easy Poached Chicken Recipe

Cook time: 15 minutes
One 12-ounce (raw) chicken breast will give you roughly 2 cups shredded chicken.

Ingredients:

  • 1 to 4 boneless, skinless chicken breasts (roughly 12 ounces each)
  • 1 teaspoon salt
  • Optional seasonings: smashed garlic, bay leaf, peppercorns, sliced ginger, sliced lemons or oranges, sliced onions or celery, fresh rosemary, fresh thyme

Chicken Noodle Casserole

It’s hard to find a dish more reminiscent of childhood for me than a good, creamy chicken noodle casserole.

With winter weather still in full effect for much of the country, it’s time to bring this classic back into our kitchens again.

I gave this recipe an update by making it with a from-scratch cream of mushroom base that doesn’t come from a can. This is simple to make in just a few minutes. All you do is whisk flour into some cooked shallots and mushrooms, and then whisk in some milk and broth to make a creamy sauce.
I used brown cremini mushrooms, but you can mix and match with whatever you have available to you. Chantarelles or Portobellos are also wonderful.

Ingredients:

  • 3 cups uncooked egg noodles
  • 5 tablespoons unsalted butter, divided
  • 1 large shallot, minced
  • 3/4 cup minced cremini mushrooms
  • 3 tablespoons all-purpose flour
  • 1/2 cup chicken or vegetable broth, plus more if needed
  • 1 cup whole milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 4 cups, loosely packed, cooked shredded chicken breast (from 2 whole chicken breasts or 1 pound raw chicken)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup Panko bread crumbs
