Vegan Potstickers

These vegan potstickers are better than takeout with a tasty mushroom and veggie filling and homemade wonton wrappers to ensure that they’re vegan! Once you’ve mastered these bad boys, you’ll never order takeout again!

This recipe for vegan potstickers has been one of the most popular recipes on the blog since I first published it two years ago. And for good reason, it’s tasty! Now, it may look complicated to make vegan potstickers, that’s why I’m updating this recipe with a video so you can see how simple it really is!



Vegan Potstickers Recipe

Prep Time : 60 min
Cook Time : 10 min
Total Time : 1 hr, 10


Ingredients:
  •     25 vegan wonton wrappers (see note)
  •     2 tablespoons oil, divided
  •     Half an onion, chopped
  •     2 cloves of garlic, minced
  •     1 tablespoons minced ginger
  •     3/4 cup chopped mushrooms (Asian mix or oyster or shiitake or white button)
  •     1 carrot, grated
  •     1 cup shredded cabbage
  •     1/2 cup chopped green onions
  •     Salt and pepper to taste
  •     1 teaspoon sesame oil
  •     Water for steaming
  •     1/4 cup soy sauce
  •     2 tablespoons rice vinegar

Coconut Lime Rice

Coconut lime rice is an easy and delicious recipe. Creative, yet simple ingredients make this a perfect weeknight side dish. This rice is vegan, dairy free and gluten free.

Happy Monday morning!

How was your weekend? Mine was very productive, yet relaxing. On Friday I spent most of the day at a functional medicine doctor’s office finally getting down to the root cause of some of the new digestive issues I have been experiencing. I’m not quite yet ready to share what’s been going on, but I am very happy to have some answers and promise I will share soon!

Besides that, I spent most of the weekend working and relaxing. I went to bed insanely early and got caught up on sleep thankfully, because this week is going to be BUSY. Hopefully our practice will be officially opening our doors this week (!!!), I’m doing a grocery store tour for USF in St Pete on Wednesday night and on Thursday night Meg and I will be back at Nature’s Food Patch doing a cooking demonstration.

I have promised myself I am going to maintain self care during this week of extra work, because its important to me to practice what I preach. I will still be doing my morning and nighttime routines daily and on Sunday I plan on spending the day at the beach.

Healthy: Diagnosing Skin Cancer


There are several different types of cancer, all of which are very dangerous and must be detected early in order to have the best possible prognosis. Skin cancer, which is an increasingly common form, is often associated with over exposure to sun or other ultraviolet radiation, including tanning beds. Because individuals with fair skin are more susceptible to a sunburn, they are also more susceptible to skin cancer. In order to protect themselves from the sun’s strength, individuals should wear sunscreen with a high SPF, hats and long sleeve shirts. In addition, taking special care to not fall asleep in the sun or spend hours every day in it’s presence may help to lessen it’s harmful effects and possibly may even prevent skin cancer.
Symptoms of skin cancer are various, but the most common is a lesion that will not heal. This may also include discoloration and overall changes in the appearance of moles. The majority of skin cancer patients can be treated with a surgical procedure that involves removing the affected layers of the skin. If skin cancer is left untreated, however, it may begin to involve the deeper layers of the skin and possibly even the lymphatic system. In addition, it may spread to other parts of the body and become resistant to treatment if not detected early.

Of all the various forms of cancer, Skin cancer has one of the highest survival rates because, unlike the others, skin cancer is usually visible and leads to earlier detection. If a skin lesion does not heal within 7 to 10 days, or if a mole begins to change in shape, color or otherwise vary in appearance, a physician should be consulted in order to determine whether or not the lesion is cancerous. During testing, a piece of the skin will be removed by the physician and sent to a medical laboratory for further testing. If the test results are positive for the presence of cancer, the physician will invite the patient to return to his/her office for a conversation regarding possible treatment options.

Chocolate Espresso Breakfast Shakes

These chocolate espresso breakfast shakes are so GOOD you guys! I’m really excited to tell you about these today, mostly because I’m drinking one while I write this up…I mean….”quality assurance” and all that right? AAANNNNND I think the caffeine just hit me.   These shakes are super creamy, chocolatey and GOOD for you!?!? I know, shocking right?

Since I started making these shakes, I can’t stop drinking them! I’m totally addicted and I don’t feel bad about it.  Why would I? There’s tons of protein and fibre in these breakfast shakes and the chocolate makes them even better!! They’re totally satisfying and the sweetness means that I’m not looking for a sugar fix 15 minutes later.  Win!

I’ve been wanting to make these for a little while.  I have a serious sweet tooth and it gets me in a lot of trouble.  You’d totally judge me if you knew the amount of sugar I consume on a daily basis.  I think it’s partly because I’m constantly exhausted and my body is craving energy.  The other part is just because I LOVE sugar. Ha!  I get it from my dad, he has a serious sweet tooth too.

So these breakfast shakes are a saviour for me.  It means that I get my caffeine boost AND my sugar fix all in one go while still being healthy!  Instead of coffee and a chocolate pastry, I’m subbing it with these chocolate espresso breakfast smoothies and I’m feeling pretty good!

These shakes are naturally sweetened and packed full of fibre and protein, so they’ll keep you going all morning (or afternoon when you hit that 3pm slump!).  The caffeine will give you the boost you need to power through your day and the chocolate is…well…it’s just DELICIOUS! I added creamy nut butter to it as well to thicken up the shakes so you feel full for longer.  And the nut flavour goes perfect with the coffee and chocolate.

Top these shakes with anything you want! I added extra nut butter, coconut cream, cocoa nibs for crunch and a little sprinkle of turmeric to feel extra healthy!



Chocolate Espresso Breakfast Shakes Recipe


Creamy chocolate espresso breakfast shakes packed full of fibre, protein and caffeine to help you get through your day!
Recipe type: Breakfast
Serves: 1

Ingredients:
  • 1 cup milk
  • ½ cup oats
  • 1 shot espresso or 2 tbsp strong coffee
  • 1 tbsp honey
  • 1 tbsp cocoa powder
  • 1 tbsp nut butter
  • coconut cream, nut butter, cocoa nibs, turmeric, dried rose petals for garnish

Spinach Risotto

When spring finally makes an appearance around here, it does so with an explosion of green. Trees that have stood gloomily bare for months begin to leaf out all at once, beckoning us to wake up(!) and get ready for the warmer days to come.

Thus the inspiration for this lovely green spinach risotto.

It’s a simple risotto—made in the classic way with risotto rice, stock, wine, and Parmesan—with the addition at the end of a half pound of chopped baby spinach with a little lemon zest and juice to brighten the flavors.

A tip about making risotto—use a rice that is meant for risotto, like arborio or carnaroli—and don’t rinse the rice. You want to use a starchy rice because it’s the stirring and slow even cooking that helps loosen the starch to create the creaminess of the risotto.

Risotto is best served immediately. It starts to firm up quickly after you make it. If you have leftovers and want to reheat, loosen with more stock.

Spinach Risotto Recipe

 
Prep time: 15 minutes
Cook time: 30 minutes
Yield: Serves 4 to 6
 

We are using baby spinach because of its convenience and tenderness. If you are using mature spinach, thoroughly rinse it first. You may want to blanch it first for a few seconds, before chopping and using in this recipe.

Ingredients:

  • 5 Tbsp butter, divided 4 Tbsp and 1 Tbsp
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon Italian seasoning (dried herbs such as basil and thyme)
  • 1/8 teaspoon ground nutmeg
  • 2 cups (400 g) risotto rice (arborio, carnaroli, vialone nano)
  • 1/2 cup white wine
  • 5 cups chicken stock (or vegetable stock for vegetarian option)
  • 3/4 cup shredded Parmesan cheese
  • 8 ounces baby spinach, finely chopped
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon of salt, more to taste
